Fresh Chilled Jellyfish Salad Strips

Jellyfish cut into ribbons and broad sheets, translucent and pale gold, gathered glossy in a light chilli and soy dressing. Sesame seeds cling to the surface and sliced red and green chilli and coriander are scattered through. It is shown in a deep white bowl at a sunlit kitchen sink, and again in a wider bowl on a wooden table.

The ribbons are springy and crisp rather than soft, and they hold the dressing without going limp. Serve it chilled straight from the bowl as a side or starter, or spoon it over rice.
